The Story
Ernie Edwards opened the Pig Hip in 1937, serving his famous pork sandwiches to Route 66 travelers. The restaurant became legendary for its oversized sandwiches and friendly service.
Ernie ran the Pig Hip for 54 years until his death in 1991 at age 91. After the building was demolished, a memorial marker was erected to honor one of Route 66's most beloved stops. Local lore says Ernie never raised prices to match inflation, keeping the Pig Hip affordable to the end.
